Prawns
A rich harvest is found in the pristine waters of the Southern Ocean - and with a coastline measuring more than 3000km and minimal shipping or manufacturing, this is a very clean and healthy growing environment for a variety of premium product.
More than 25 species of prawns can be found in Australian waters, the most common species are banana, school, tiger and the large and juicy Western King prawns and each variety has its own distinctive markings, but once cooked they all become the pinky-orange colour we're familiar with.
